Samarkand-style palov is the city's essential meal, often served at lunch and presented in distinct layers of rice, carrots, meat and chickpeas rather than fully mixed. Popular plov houses can finish a batch after the midday rush, so arrive before late afternoon and ask what remains. Samarkand non—dense, decorated round bread—travels well as an edible gift, while tandir samsa, shashlik, lagman, manti and seasonal salads broaden a meal plan beyond one national dish.
A dish being traditional, locally familiar or widely served does not by itself prove formal halal certification, pork-free storage, separate utensils or an alcohol-free dining room. Ask the exact restaurant. International hotels may operate bars, and a tourist restaurant may list alcohol even when its food is locally typical. Vegetarian dishes reduce uncertainty about meat but do not establish separate preparation.
