Ayat began in Bay Ridge in 2020 and identifies its cooking as Palestinian soul food. The original restaurant at 8501 Third Avenue helped establish a wider group of branches while retaining a menu organized around mezze, filled pastries, stews, rice dishes, grills and breads associated with Palestinian family tables.
Mansaf layers bone-in lamb, fermented yogurt sauce, rice and saj bread beneath almonds. Maqluba arrives as an inverted construction of chicken, carrots, potato, cauliflower, eggplant and rice, while musakhan places sumac-rich onions, pine nuts and roast chicken over taboon bread. These large compositions are explicitly portioned for sharing.
Smaller dishes include hummus, muhammara, baba ghanoush, labneh, stuffed grape leaves, kibbeh and falafel. Ayat's walls and menu language make Palestinian cultural identity visible alongside the food, so the restaurant functions as both a neighborhood dining room and a public expression of a cuisine often flattened into a generic Middle Eastern category.
