Mansaf places lamb and rice under a fermented jameed yogurt sauce; maqluba turns a pot of rice, meat and vegetables upside down into a layered mound. Musakhan lays sumac-rich onion and chicken over taboon bread, allowing olive oil and roasting juices to soak into the base.
